What you do with your waffle is up to you, but there are tons of toppings you can choose to try. However, you’ll first need your waffle.

To make the classic Kodiak waffle, you could just add 1 cup of water to 1 cup of mix, but in this classic waffle, we want just a little more protein, without adversely affecting the taste. We’ll do this by replacing water with the water content in the dairy products and egg.

You will need the following ingredients:

☐ ½ cup plain yogurt or skyr (Icelandic yogurt)

☐ 1 teaspoon vanilla

☐ ½ cup water or milk

Method

Step 1: Set your waffle iron to about a medium heat and turn it on so it will preheat. Grease it with your favorite oil, melted butter, or ghee. I prefer not to use non-stick sprays since I think that can lead to a sticky layer forming on the waffle grids.

Step 2: Put all the ingredients in a bowl or measuring jug. Stir with a spoon or fork until the ingredients are just combined. You won’t want to overmix the batter since that will draw out the gluten content, making the finished waffles a little chewy rather than light and fluffy.

Step 3: You don’t want the batter to be too thick. It needs to be pourable, so add a little more water or milk to get the consistency right.

Step 4: Once the batter is ready, and the waffle iron is up to heat, pour or ladle some into the center of the waffle iron. Don’t fill it up to the edges otherwise you’ll have batter ooze out once it starts to cook and expand. About a ladle should be about right.

Step 5: Let the waffle cook. You’ll know when it’s done when there’s little or no steam coming from the edges of the waffle iron. In terms of time, this is usually about 3-5 minutes.

The quantities quoted in this recipe will be enough to make two or three protein-packed breakfast waffles. If you need more, increase the quantities accordingly. But if you are cooking for one, freeze the extra waffles for later. To refresh them, thaw and then crisp them in a toaster.

This recipe takes dark chocolate and adds it to the Kodiak Protein Power Cake mix to create the ultimate breakfast delicacy. Dark chocolate is an excellent sweet, as it doesn’t contain too much sugar, and in moderation, it’s even thought to be good for you. So, this is an indulgence you can enjoy without too many guilty thoughts.

Here are the ingredients you need to make these delicious waffles in the morning:

Batter ingredients

☐ 1 cup Kodiak Flapjack and Waffle mix

☐ 1 cup almond milk

☐ ¼ teaspoon cinnamon

☐ ¼ teaspoon vanilla extract

Toppings

☐ 2 tablespoon almond butter

☐ 1 bar of 90% cacao dark chocolate (you’ll only use about ½ – 1 square)

☐ 2 tablespoon maple syrup or chocolate sauce

After you have gathered all these ingredients, you’re ready to get going with making your own dark chocolate waffles.

Method

Step 1: Turn on your waffle iron and preheat it to medium heat. Use your oil of choice to grease the waffle grids. Alternatively, use butter or ghee.

Step 2: To save time later, create your chocolate shaving first. Place the chocolate bar on a cutting board or work surface with the bar’s flat base facing up.

Step 3: Hold down the furthest end of the bar with one hand and use a kitchen knife in your other hand to scrape the chocolate surface towards you a few times to form chocolate shavings. Spin the bar around 180° and scrape shavings off the other end of the bar.

Step 4: Gather up the chocolate shavings and transfer them over to a plate or container and set them aside until later use.   

Step 5: Put the pancake mix, almond milk, cinnamon, and vanilla extract in a mixing bowl or large measuring jug.

Step 6: Stir the ingredients with a spoon or fork until the ingredients are just combined. Do not overmix the batter otherwise, strands of gluten will form, making the waffles chewier than light and fluffy.

Step 7: When you have mixed the batter, pour or ladle some into the center of the preheated waffle iron. Avoid overfilling the waffle iron otherwise batter will ooze out the sides and it begins to cook. Approximately a ladle full is about right for a 7-inch round waffle iron.

Step 8: Leave the waffle to cook until little or no steam is escaping from the side of the waffle iron. This should take about 3-5 minutes.

Step 9: When cooked, remove the waffle from the iron and put it on a serving plate.

Step 10: Spread the waffle with almond butter, add slices of the banana, and top with chocolate shavings.

Kodiak Pumpkin Waffles

☐ 2 Tbs Kodiak Flapjack and Waffle mix

☐ ½ tablespoon protein powder

☐ 2 egg whites

Step 2: Put the Kodiak mix, protein powder, eggs, pureed pumpkin, water, and pumpkin spice into a mixing bowl or large measuring jug.

Step 3: Mix the ingredients together with a spoon or fork. A small number of lumps do not matter since you don’t want to overmix the batter.

Step 4: When the waffle iron is ready pour or ladle some into the center of it. Try not to overfill the waffle iron to prevent the excess batter from oozing from the sides of the waffle iron. For a 7-inch round waffle iron about a ladle of batter should be enough.

Step 5: Cook for about 3-5 minutes. Don’t try opening the waffle iron too soon, since that will probably result in the waffle sticking and breaking apart. Wait until little or no steam is escaping from the side of the waffle iron.

Step 6: When ready, remove the waffle from the iron and add toppings such as fresh blueberries and pecans or chocolate chips and raspberries. For the ultimate breakfast treat, add some whipped cream or a spoonful of skyr (Icelandic yogurt).

These waffles taste incredible, no matter what time of the year it may be.

Cinnamon Sugar Kodiak Waffles

If you have a sweet tooth, cinnamon sugar Kodiak waffles will really hit the spot for you. This recipe comes with a little bit of a Kodiak pancake mix twist. It’s simple to create but so good that you’ll be hungry for more, but in a good way.

You will need the following ingredients to make these waffles:

Batter ingredients

☐ 1 cup Kodiak Flapjack and Waffle mix

☐ ½ teaspoon ground cinnamon

☐ 1 tablespoon sugar

☐ ¼ cup canola or avocado oil

☐ 1 teaspoon vanilla extract

☐ 1 egg (separated)

☐ 1 cup milk of whole milk or buttermilk

Cinnamon Sugar ingredients

☐ 1 tablespoon light brown sugar

☐ 1 tablespoon white granulated sugar

☐ ½ teaspoon ground cinnamon

☐ ½ cup melted butter

Method

Step 1: Switch on your waffle iron and preheat it to about medium heat. Use a little oil or melted butter to grease the waffle grids.

Step 2: First make the cinnamon sugar. Mix together the ground cinnamon, light brown sugar, and white sugar. If the brown sugar is a little lumpy try to break it up so that everything is as evenly mixed as possible. But don’t spend too much time trying to get everything perfectly mixed.

Step 3: Spread the cinnamon-sugar mixture over a wide-bottomed bowl or plate and set aside until the waffles are ready.

Step 4: Put the dry ingredients, Kodiak mix, ground cinnamon, and sugar, into a mixing bowl and mix thoroughly.

Step 5: In a separate bowl, use an electric hand mixer to combine the milk, egg yolk, vanilla extract, and oil.

Step 6: Add the mixed dry ingredients to the bowl of wet ingredients and mix until the batter just comes together. Do not over mix the batter.

Step 7: Whisk the egg white until it forms stiff peaks.

Step 8: Fold the egg white into the waffle batter. Do this gently to keep the bubbles of air intact. The bubbles will help make the waffles extra light and fluffy.

Step: 9: Pour about a ladle of batter into the center of the preheated waffle iron and close the waffle iron. Cook for about 3 minutes, until steam stops coming out from the sides. The cooked waffles should be a golden color.

Step 10: While the waffle is still warm brush top and bottom with melted butter, then dip the waffle in the cinnamon sugar. Flip it over a few times to ensure the waffle has a good covering of cinnamon sugar. Do not skip brushing the waffle with melted butter, this is necessary to help the cinnamon sugar stick to the waffle.

Step 11: Top the waffle with fresh fruit, such as blackberries, blueberries, raspberries, and strawberries. Add a scoop of whipped cream or skyr, then drizzle with a little maple syrup.

NB: You can simplify the method by adding the whole egg into the wet ingredient and forget whisking the egg white. The waffles won’t be as fluffy, but the recipe will still work.
